Why we love it: The Brazil Fazenda Santa Rita is round, creamy, has a mellow acidity, and notes of toffee, milk chocolate and molasses.
Farm story: In 1980, Filomena Estefânia and her brothers acquired a farm in Patrocínio that would eventually be named Fazenda Santa Rita. Their father, Francisco Mattos, was a coffee producer in Brazil and had passed on his passion to his children. Now, Filomena's daughter, Maria Thereza, manages the farm alongside her and the entire operation is run with dedication and care. Close attention is paid to soil and leaf analysis to ensure plants are healthy and the farm is increasing using biological pest control and organic matter based fertilizer. Each section of the farm is harvested, processed, and stored separately to preserve lot identity and quality.
